Mechanical harvesting of grapes at the right ripeness and with an excellent acidity / sugar ratio. Slow alcoholic fermentation at low temperature with the help of selected yeasts. After the first decanting the wine is kept for 2 months on the yeasts and is sent for a long second fermentation in an autoclave at a controlled temperature.
Slightly fruity aroma with hints of white flowers. Citrine and persistent fresh taste.
